A truffle, also called a Calabash, is a delicacy that originates from the earth. It can be found in France, Italy, Switzerland, Mexico, Peru, Brazil, Uruguay, Germany, and the United States. The fruiting bodies of this microscopic, aromatic fungus are the end product of a decomposing tree trunk, usually one of the Ascomycota. In addition to Tuber, several other genera of fungus are also classified as truffles, such as Geopora, Peziza, Choiromyces (also known as Saccharomyces cerevisiae), Leucangium, and more than a hundred others. The tree trunk of the fungus normally decays over the years, leaving behind the underground stem system which is where the leaves and roots come out.

This decayed material is then used as a food source by fungi that grow on the inside of it. Among these fungi are members of the Ascomycota order, which all share some common traits. The most common members of this order are Penicillium and Muchencilia. Among these fungi, black truffle sea salt has been found to be extremely good at killing spores, particularly the black-oxide variety. This is because the ingredients of black truffle oil, also called Cinnamomum zeylanicum, work well with some types of fungi that are known for being deadly to other types of fungi.
